Christmas Wedding Cake with Gingerbread

Ingredients

For the Cake Layers:

2 cups all-purpose flour (260g)
1 cup whole wheat flour (130g)
3/4 teaspoon salt
3 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon cloves
1 1/2 teaspoons ginger
1/4 teaspoon nutmeg
230g butter, softened
160g brown sugar
210g granulated sugar
4 large eggs, room temperature
2 teaspoons vanilla
1 cup molasses
1 cup buttermilk

For the Frosting:
283g butter, softened
225g cream cheese
225g mascarpone
750g powdered sugar, sifted
2 1/2 tablespoons milk
1 tablespoon vanilla extract
Pinch of salt

For Decoration:
Gingerbread houses
Gingerbread men
Sugar snowflakes
Fondant stars
Cranberry jam for filling

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line four cake pans with parchment paper.
  2. Make the Cake Batter:
    • In a large bowl, whisk together flours, salt, baking powder, and all spices
    • In a separate bowl, cream butter with both sugars until light and fluffy
    • Beat in eggs one at a time
    • Stir in vanilla and molasses
    • Gradually add dry ingredients alternating with buttermilk, mixing until just combined
  3. Prepare the Frosting:
    • Beat butter, cream cheese, and mascarpone until light and fluffy
    • Gradually add sifted powdered sugar
    • Mix in vanilla, milk, and salt until smooth and creamy
    • Beat until stiff peaks form
  4. Bake:
    • Divide batter evenly between prepared pans
    • Bake for 22 minutes or until a toothpick comes out clean
    • Cool in pans for 10 minutes
    • Remove from pans and cool completely on wire racks
  5. Assembly:
    • Level each cake layer if needed
    • Place first layer on cake board
    • Spread cranberry jam and frosting between each layer
    • Create a crumb coat and chill
    • Apply final coat of frosting in a smooth finish
    • Create dripping snow effect on each tier
    • Stack tiers using appropriate support
  6. Decoration:
    • Add gingerbread decorations
    • Pipe snowflakes and details
    • Place sugar flowers and stars
    • Add final touches with edible glitter or pearl dust
