Passionfruit Layer Cake with Passionfruit Curd and Mascarpone Cream Frosting
Before You Start: A Few Things You Might Be Wondering
“Is this recipe actually worth the effort?”
Yes.
Every single component of this passionfruit layer cake earns its place. The curd is tangy, silky, and outrageously fragrant. The cake layers are soft, tender, and just sweet enough to let the passionfruit shine. The mascarpone cream is cool, cloud-like, and holds everything together without being cloying.
“Do I need fresh passionfruit?”
No, and I’ll explain exactly what to use instead.
“Will the layers slide around?”
Not if you follow the assembly steps properly — I’ve made that mistake so you don’t have to. This is an intermediate cake, which means it has multiple components but nothing technically beyond reach. If you’ve made a layer cake before, you’re ready for this.
